A couple of recent indulgences not really eggs although eggs will certainly play a large part in their lives. The top tin is for making brownies - I have a brownie recipe that I love to make but have not had the right size tin - till now (this was from a great shop in Ramsgate HOME BASICS https://www.facebook.com/pages/Homebasics/130959286951894 that carries a very good range of products. I know I want some more items from this range.
The bottom tin is one I have wanted from LAKELAND LTD http://www.lakeland.co.uk/Homepage.action for a very long time and now that I have it ALMOND SLICES to test it was the only thing to do.
This is a recipe from a school cookery book
6 ounces shortcrust pastry
2 ounces butter (softened)
2 ounces sugar
2 ounces ground almonds
2 ounces ground rice
1 egg
raspberry jam
1ounce flaked almonds
Line a prepared 7inch square tin with shortcrust pastry, spread with the jam. Put the butter, sugar, almonds, rice and egg into a bowl and mix well. Spread the cake mix on top of the jam and sprinkle the flaked almonds on top.
bake for 20 to 25 minutes at gas reg 5 / 180 degrees centigrade
My changes to this recipe are.
3 ounces of ground almonds
1 ounce self raising flour and because I like this cake to be quite almondy I put in a half teaspoon of almond essence.
